Salmon with Creamed Cauliflower and Pesto Oil

Salmon with asparagus with creamed cauliflower with pesto oil drizzle.

This might be the new best thing i’ve ever made.

I steamed the cauliflower until very tender then riced it in the food processor and added butter, cream cheese and half and half.  I seasoned it with salt, pepper and garlic powder and added  about a teaspoon of flower to thicken it up.  The drizzle is just a combination of a tablespoon of pesto and the same amount of olive oil blended up in our magic bullet. It was amazing.  Crazy good, amazingly good. This dish made mashed potatoes unnecessary.   Wow.

#BrideDiet- i used a TINY bit of oil   and fresh, grated parmesan cheese.   Yum!

Spicy Shrimp over Veggies

Bang Bang Shrimp-  broiled shrimp topped with a spicy mayo sauce, over teriyaki veggies and tofu ‘noodles”

#BrideDiet – I used lite mayo for the topping and low sodium teriyaki sauce. The rest is just veggies tofu and shrimp. yum!

#BrideDiet-  I used yogurt instead of mayo for the mixture and low fat mozzerella on top!

Zucchini Chips

Baked sliced zucchini with salt

#BrideDiet a cup of these little guys taste like potato chips and have only… 20 CALORIES!  They’re amazing.

Slice a whole zucchini with a mandoline,  spray a cookie sheet and place evenly, spray the tops and sprinkle with just a little salt (they shrink, so if you put a normal amount of salt on them they will turn out salty). Bake at 225 for about an hour  and fifteen minutes or until they are crunchy and awesome.

Buffalo Chicken Boats

#BrideDiet the avocado is healthy fat and buffalo sauce has no calories. The only slightly bad ingredient is the blue cheese, but just a little bit!

Brussels Sprout Pizza

Crunchy pizza with garlic olive oil topped with sauteed brussels sprouts and shallots cooked in bacon grease, with bacon too and Italian cheeses!

I think this is the best thing I’ve ever made.

Tempura Asparagus

Tempura Fried Asparagus

NOT #BrideDiet

For the tempura batter- combine equal parts of flour and lemonlime soda water.   Fry the asapargus in 350 degree oil until  light golden brown, they’ll brown up a bit after you take them out of the pan and put them on a paper towel to drain the oil.

I wish i would have made a sriracha mayo to tip them in!

Turkey Zucchini Lasagna

2Lasagna made with sliced zucchini, turkey meat sauce, sauteed mushrooms and cheeses!

#BrideDiet-  the sauce is made from ground turkey, beef bouillon, red wine, fresh tomatoes, tomato paste and seasoning- nothing bad there!  The mushrooms are sauteed with a little butter substitute and seasoning.  I only did one layer of riccotta cheese- with part skim and low fat parm.  The top layer is the only negative-  low fat mozzarella cheese and fresh parm.

Turkey Meatloaf with Veggies

Turkey and Mushroom Meatloaf with Mashed Cauliflower, roasted Brussle Sprouts and Mushrooms and Onions sauteed in red wine and veal demi glace.

#BrideDiet – no carbs in the meatloaf-  only ground turkey, diced mushrooms and onions, powdered parm, eggs and seasoning.  Mashed cauliflower instead of potatoes! No carbs!  And yummy fresh veggies.

Sriracha Yogurt Brushed Cod with Zoodles and Roasted Tomatoes

Broiled cod brushed with a yogurt- sriracha- soy glaze.  With garlic zoodles and roasted tomatoes.

#BrideDiet-  no butter or oil,  used a cool kitchen tool to cut the zucchini into noodle shapes!  Sauted the zoodles with garlic and roasted the tomatoes with cooking spray.

Chicken with Buffalo Cauliflower

Pan seared chicken with roasted brussle sprouts and buffalo coated cauliflower!

#BrideDiet – cooked the chicken with cooking spray  and seasoning,  used spray for the sprouts.  The cauliflower is roasted and then brushed with buffalo sauce and broiled til crispy.
